Challenged by Cooking for One?

Sometimes cooking for one person can be more of a challenge than cooking for ten. Convenience foods and fast-food restaurants often become the rule rather than the exception. Fortunately, eating alone does not have to mean giving up good nutrition for the sake of convenience. Here are some tips for obtaining all of the healthful food groups as identified in the Food Guide Pyramid.

Shopping Tips

  • Do take advantage of the 'economy' packs of meat, poultry, and fish. At home re-wrap in individual servings and freeze.

  • Buy smaller containers of fresh fruits and vegetables that are ready to eat.

  • Buy frozen vegetables and fruit. Portion out one serving at a time.

Cooking Tips

  • Go ahead and cook for a crowd; then make your own individual TV dinners and freeze for later.

  • Cook a large batch of stew or chili. Frozen individual containers can be heated in the microwave for a quick meal. Add a slice of whole wheat bread, fresh fruit, baby carrots and a glass of milk for a well-balanced meal.

  • Keep your own convenience foods on hand - peanut butter, low-fat yogurt, cheese, oatmeal, nuts, canned or dried fruits, etc. for those times when you don't want to cook.

  • Build a meal around a baked potato cooked in the microwave.

  • Try a microwave-baked apple. Slice one apple, sprinkle with cinnamon; add a few raisins and nuts. Cover and microwave 2-3 minutes until soft.
